  18. Make ready 1 kg Mutton Champs
  19. Take 3 Onions Slices
  20. Make ready 3 tomatoes chopped
  21. Take to taste Salt
  22. Take 1 tbspn cumin seeds
  23. Make ready 1 tsp black pepper powder
  24. Take 1 tsp red chilli powder
  25. Prepare 1 tbspn whole spices
  26. Prepare 1 tbspn coriander powder
  27. Prepare Oil (as required)
  28. Get 1/2 tsp garammasala powder
  29. Prepare 4-5 green chillies
  30. Prepare 1 pinch black seeds
  31. Get 1 tbspn ginger garlic paste
  32. Prepare 1 cup water
  33. Make ready For garnish 1 green chilli, fresh coriander leaves,gram masala

A classic yakhni pulao is meticulously prepared by simmering basmati rice in an aromatic chicken, lamb, or goat broth. In this version, chicken thighs are simmered in a spiced tomato base along. Comfort food in the truest sense - this one is a quick chicken pulao prepared in a pressure cooker. Marinated chicken pieces cooked with whole masalas and rice, this one gives you all the flavours of a biryani in a much simpler avatar.

Instructions to make Chicken Pulao & Namkeen Mutton Champs:
  1. Heat a very generous lug of oil in a pot big enough to cook your pulao in.
  2. Add the onions and cook on medium heat till amber..
  3. Now add the chicken and saute until the pieces are all white
  4. Add all the remaining pulao masala ingredients except the green chillies
  5. Mix well, saute on medium high heat for two minutes
  6. Let the masala come to a boil, then simmer on low until the chicken is done. The chicken releases it's own liquid so you shouldn't need to add any unless the masala seems like it will stick/burn.
  7. When the masala is ready the oil will have risen to the top and the chicken will be tender. This can take anywhere between 25-35 minutes depending on your chicken.
  8. Once the chicken is done add the rice, green chillies, and 3.5 cups of water to the pot along with 1.5 tsp salt
  9. Mix well and taste, it should be just a little salty.
  10. Bring the pulao to a boil and cook partially covered until almost all the water has evaporated then close the lid completely for 5-8 minutes until the remaining moisture has absorbed and the rice is done.
  11. For champs Ingredients..
  12. Add all ingredients mutton,oil and tomatoes in pressure cooker cover it cook on slow heat for 30-45 minutes until meat is tender.
  13. Remove lid and cook for 5 minutes add 1 cup water (Optional) cook on high heat for 5 minutes stirring frequently until oil separates.
  14. Garnish with coriander leaves,green chilli and garam masala… Serve with raita and kachomar salad..
